Chocolate Peppermint Martinis and chocolate peppermint bark offered at the bar *

Soup bar to be set up featuring:

  • Manchego grilled cheese bite with shrimp gazpacho
  • Gingered pumpkin soup with spicy pecan cream

Dinner buffet to be set up offering:

  • Festive roll of holiday pork and beef tenderloin roast stuffed with chestnuts and cranberries served with a cranberry-merlot wine sauce with garlic and shallots
  • Butternut squash with baby spinach
  • Grilled Cajun filet of tilapia mojito
  • Red-skin parsnip mashed potatoes
  • Mixed green mesclun salad of red and green oak lettuce, frisee, arugula, and radicchio tossed with dried cranberries and candied walnuts in honey-poppyseed vinaigrette

Dessert:

  • Holiday Pumpkin Roll with creamy and moist cream cheese filling, sprinkled with powdered sugar

Crostinis to be passed including:

  • Smoked trout with cucumber and dill
  • Succulent beef tenderloin with horseradish sauce, thyme and colorful peppers
  • Herb cheese and radish
  • Prosciutto with arugula and gorgonzola

To be placed in party area:

  • Burrata: buttery mozzarella served with Italian bread, pears, and dried figs
  • Brie with caramel, nuts, and fruits accompanied by flat breads and crackers
  • Miniature spinach and mushroom strudel with roasted red pepper sauce
  • Pesto hummus with roasted red peppers and toasted pita petals

Dinner buffet to be set up offering:

  • Roasted maple-walnut glazed breast of turkey
  • Pork with Asian pears, leeks, lemongrass, jalapeno, and thyme
  • Scalloped potatoes au gratin
  • Green beans with dried cranberries and chestnuts

Hors d’oeuvres to be passed on silver trays including:

  • Chicken Polynesian with chutney butter
  • Fried mozzarella sticks with marinara dipping sauce
  • Steamed shrimp served on a bed of fresh seaweed with cocktail sauce and lemon

Chef Carving:

  • Mini-rounds of beef and roasted breast of turkey to order with condiments of horseradish sauce, dijon mustard, mayonnaise, and orange-cranberry salsa at side, flanked by an elaborate bread display with a variety of cocktail rolls

Redskin Mashed Potato and Sweet Potato Bar to be set up with condiments of cheddar cheese, chives, sour cream, sautéed mushrooms, walnuts, brown sugar, miniature marshmallows, and cinnamon

Italian station to be set up offering:

  • Choice of pasta including penne, ziti and rotini
  • Meatballs Marinara
  • Pesto with basil, garlic, and pine nuts
  • Alfredo cream sauce
  • Fresh tomato basil sauce
  • Freshly grated parmesan cheese
  • Caesar's Salad: crisp Romaine lettuce tossed with croutons and parmesan in creamy Caesar dressing

  • Heirloom tomato and oyster aspic served on a bed of baby arugula drizzled with lemon-dill vinaigrette
  • Rustic bread and butter

Entrée:

  • Grilled Cajun breast of duck with a cherry brandy sauce
  • Oxtail ragout
  • Pappardelle pasta
  • Holiday bouquet of haricots verts with pimientos

Dessert:

  • Flaming Baked Alaska: classic ice cream cake topped with meringue and flaming in dramatic fashion

Dinner buffet to be set up offering:

  • Carne Guisada: Tender chunks of beef stewed with tomatoes and vegetables
  • Chicken mojito: grilled breast of chicken topped with a flavorful dressing of olive oil,
    red and green peppers, capers, and cilantro
  • Rice with vegetables
  • Black beans
  • Russian salad of potatoes, carrots, peas, eggs, and beets in a creamy dressing
  • Tossed garden salad
  • An elaborate bread display with a variety of rolls and butter

Dessert:

  • Flan: caramel custard finished with a soft caramel topping
